Called when a formula is tapped, with the formula and the part of it under the finger.

The default formulas wire it, and so do InlineLatexBuildDetails.defaultSpan and BlockLatexBuildDetails.defaultWidget. A formula a builder draws itself reaches it through the details' onTap. The deprecated latexBuilder does not.
